Hearty Butternut Squash Soup: ( Courtesy: Better Homes & Gardens)

Yes it’s that time of year again, with the comfort foods, heartwarming soups!  And what better way to celebrate Autumn than with a bowl of Hearty Butternut Squash Soup.  Autumn is the time of year with lots of colourful leaves as they turn, crisp fall air, warmer sweaters, and enjoying comfort foods!  And this tasty soup is among my favs!  Enjoy!

Butternut Squash Soup

Prep: 30 min | Cook: 15 mins | Roast: 1 hr at 350° | Servings: 10

Ingredients
3 pounds butternut squash, peeled, seeded, and cut into 1-inch pieces
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 cup chopped onion (1 large)
1 tablespoon unsalted butter
3 14 ounces cans vegetable broth
Kosher salt and freshly ground black pepper
Snipped fresh chives (optional)

Directions
Step 1 – Preheat oven to 350ºF. In a large shallow roasting pan, toss together squash, oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Roast, uncovered, about 1 hour or until tender, stirring once.

Step 2 – Meanwhile, in a 6- to 8-quart Dutch oven, cook onion in hot butter over medium-low heat about 20 minutes or until golden brown, stirring occasionally.

Step 3 – Add roasted squash and broth. Bring to boiling; reduce heat. Simmer, uncovered, for 15 minutes. Cool slightly.

Step 4 – Transfer squash mixture, in batches, to a blender; cover and blend until smooth. Return pureed mixture to Dutch oven. Season to taste with additional salt and pepper. If desired, garnish each serving with chives.

Welcome to a sample email of my ongoing Mental Health email series. If you or someone you know suffers from depression, anxiety or any other mental health issues, here is where you can get some informational tips and understanding of how to cope. Psychotherapy approaches are many and varied. Some types are rooted in years of research, while others are relatively new and rely mostly on anecdotal evidence. Today I’ll be focusing on giving you an overview of some of the most popular types of therapy.

Art Therapy:

A less conventional type of therapy, art therapy involves the use of creative techniques such as drawing, painting, coloring, sculpting, or collage to help people express their feelings in a way that creates a tangible product that can be analyzed and decoded to examine psychological and emotional undertones. Art therapy is thought to help people better understand suppressed feelings. The underlying theory about art therapy is that because art is a unique creation, each person brings their own memories, emotions, and thoughts to their work. Analyzing said work is then a way to interpret the person.

During a session, an individual will work with a professional trained in psychotherapy and visual arts at an accredited educational institution. The individual will create some form of artwork either in or out of the therapist’s office and then, upon finishing, patient and professional will talk about the creative process, together.

Animal-Assisted Therapy:

It has been proven in many studies that animals can provide a sense of calm, comfort, or safety and divert attention away from a stressful situation people struggling with mental health. Advocates of animal-assisted therapy say that developing a bond with an animal can help people develop a better sense of self-worth, emotional stability, and socialization skills. Animals, of course, can also help provide a sense of companionship to people with autism, medical issues, depression, or other mental illnesses that might cause isolation.

Group Therapy:

For some people, meeting one-on-one with a therapist can be intimidating or uncomfortable. In group therapy, a small group of people with similar issues will meet regularly to discuss life and individual problems. Meeting in a group setting provides a sense of camaraderie while creating a support system. Perhaps the most commonly known type of group therapy is Alcoholics Anonymous, where individuals share struggles with alcohol abuse in a safe setting.

Mindfulness:

Rather new in the Western world, mindfulness therapy works to makeover every aspect of life to train the body and mind to live more “in the moment.” The goal of mindfulness is to focus less on reacting to something or someone and more on observing and accepting without judgment. It teaches you to be aware of your thoughts and feelings to accept them — instead of attaching and reacting to them. In essence, there is a significant focus on reflection. Often, mindfulness is approached as a lifestyle that incorporates “clean eating,” meditation, and sometimes yoga, in an effort to lower stress levels and ease pain, anxiety, depression and overall suffering.

Psychoanalytic Therapy:

Perhaps the most popular and well-known form of therapy, psychoanalytic is a type of in-depth talk therapy that aims to bring unconscious, repressed, or deeply buried thoughts and feelings to the surface through discussions about early formative experiences. Working together, the therapist and client unpack how these repressed early memories have affected the client’s thinking, behavior, and relationships in adulthood. Therapists who perform this type of therapy have studied the theories of Sigmund Freud, and analyze the patient in the same way that Freud would have. Standard practices include dream analysis, word association, and exploration of childhood trauma.

If you’ve never made an appointment to visit with a professional therapist before, you might be a bit hesitant. You might be thinking, ‘that’s what friends are for! I have plenty of people to talk to, and I don’t need to find a professional.’ But your friends likely aren’t trained to deal with your specialized array of needs and emotions. Furthermore, they can’t provide the type of non-judgmental, non-attached advice and listening skills that a professional can.

Take a moment and visit Psychology Today’s therapist finder. Do a little digging and see if you might want to make an appointment with someone in your community. Most likely, your insurance covers at least a portion of your visits, and it can be tremendously helpful to meet with someone, even just once.

Garden Veggie Quiche

A delightful meal or as a side dish! Garden Veggie Quiche is a meal your whole family will love! So delicious and easy to make! Try this weekend!

And why, you say, Quiche? Here are some healthy and time saver reasons why!…

The options are endless! What your Quiche creation?

For more healthier recipe, check your substitutions! Making a homemade pie crust, you can chose what ingredients you use. Using Almond flour or rice flour, you can cut down on the gluten.

You can also substitute other veggies for a change as well add cut up chicken breasts or ground beef. As long as you have your main ingredients: eggs, cream and pie, the possibilities are endless! Be creative! And enjoy!

YIELD: 8 | PREP TIME 15 minutes | COOK TIME 50 minutes | TOTAL TIME 65 minutes

Ingredients
1 Pie Crust (store bought or homemade)
2 Bell Peppers, Chopped
2 Cups Baby Spinach, Chopped
1 Roma Tomato, Chopped
1/2 Onion, Finely Chopped
2 Green Onions, Finely Chopped
1 Tbsp butter
1 Cup Cheddar
8-10 Slices Canadian Bacon, chopped (can be left out if making it vegetarian)
6 Eggs
1 Tbsp Flour
1/2 Cup Heavy Cream
1 tsp salt and pepper

Instructions
Preheat oven to 350. Unroll Pie crust and line a deep dish pie dish with crust. Bake for 7 minutes, then remove from oven and press up sides with a fork.
In a pan melt the butter, then saute the onions for 1 minute and then add the peppers and green onions and cook for 5 minutes, season with salt and pepper, then add the canadian bacon, tomato and Spinach and cook for another 3 minutes, until the spinach has cooked down. Remove from heat and set aside.
In another bowl whisk together the eggs, 1 tbs flour and heavy cream (ok if a little lumpy). Add the shredded cheese into the egg mixture and stir.
Next, combine the veggies and egg mixture until everything is incorporated.
Fill pie crust with filling, place on top of a baking sheet (in case of spillage) and bake for 40 -50 minutes. Allow to cool for 10-15 and serve!

Did you know that most skincare products on the market are loaded with ingredients that are actually toxic to your skin and body?

It’s true. Artificial ingredients and chemicals are used to have a positive effect on the skin. However those positive effects are often temporary, yet the negative effects last long term because the toxic ingredients are absorbed by the skin and build up within the body.

Thankfully, there are many natural and inexpensive options out there, and most of them can be found in your pantry!

Below, are some skincare alternatives for healthy, beautiful skin. Just pick your skin type, and try adding these natural products to your beauty routine.

Oily Skin
Exfoliating- Equal parts sea salt and oil to create a natural scrub to brighten the skin. Gently apply in a circular motion, rinse with warm water, and pat dry.
Cleansing – Equal parts castor oil and olive oil. Massage in and wipe off with a warm cloth.
Toning – A tablespoon of apple cider vinegar in a cup of water kept cool in the refrigerator to splash on the face.
Moisturizing – May not be necessary for oily skin. But if needed, a thin coat of coconut oil will work great.

Normal/Combination Skin
Exfoliating – Equal parts sugar (white or brown) and olive oil. Gently apply in a circular motion, rinse with warm water and pat dry.
Cleansing – A mix of 1/4 castor oil and ¾ oil (olive or almond). Massage in and wipe off with a warm cloth.
Toning – A tablespoon of apple cider vinegar in a cup of water kept cool in the refrigerator to splash on the face.
Moisturizing – If needed, a thin coat of coconut oil will work great.

Dry Skin
Exfoliating – Often not necessary for this skin type, but lightly rubbing a dry washcloth in circular motions can work if needed.
Cleansing – A mix of teaspoon of castor oil in 1/4 cup of another oil like olive or almond). Massage in and wipe off with warm cloth.

Summertime is when kids are out of school. It’s fun in the sun time! At the same time being the hottest season, we all get overheated, especially your kids!

They are always looking for a quick and easy treat that will cool them down, at the same time, satisfy their taste buds! And what better way than this cool summertime treat… Homemade Fudgesicles Recipe!

It’s simple, easy to make the night before and be ready the next day! Whether you’re a little or big kid, this summer treat is one you deserve to try!

I know I am definitely going to try this, this summer! Here’s to a healthy and happy summer!

Homemade Fudgesicles Recipe
Ingredients:
1 package Instant Jello Chocolate Pudding (The box size that says 4 servings)
2-2/3 cups Milk
Popsicle Mold
Directions:
Make sure your popsicle mold and popsicle sticks are clean and ready to go before you start.
Whisk together the pudding mix and the milk until smooth.
Pour the pudding into each slot in the popsicle mold until it’s about 1/4 inch from the top.
Put the lid on the popsicle mold (if it has a lid). Push the popsicle sticks into each popsicle until they’re about 1 inch from the bottom.
Place the molds in the freezer for about 6 hours or until completely frozen. Run the molds under warm water to help remove the fudgsicles. Enjoy!

Raspberry Summer Sensation

This looks AMAZING 😋😋

Summertime is coming! And with, family barbecues, family gatherings even family reunions! Make this summer event a day they will remember with rhis delightful dessert, Raspberry Summer Sensation! You can find this delicious dessert and others at food.com

Yields: 12 Servings
2 cups raspberry sorbet, or 2 cups sherbet
1 cup cold milk (can use Almond milk)
1 (106 g) package instant vanilla pudding (or try chocolate for an extra special treat!) (look for sugar free)
3 cups Lite Cool Whip, thawed
1 cup fresh raspberries

Directions:

Line a 9×5 inch loaf pan with foil, spoon sorbet into pan and put in the freezer for 10 minutes.

Pour milk into a large bowl and add dry pudding mix. Whisk until well blended and fold in whipped topping. Spread pudding mixture over sorbet in pan.

Freeze for at least 3 hours or overnight. Wrap securely and label if freezing longer than 24 hours. Unmold loaf pan onto a serving platter and top with fresh raspberries just before serving. It will be easier to cut if it rests for 15 minutes.
