GARLIC BUTTER CHICKEN BITES WITH LEMON ASPARAGUS

Eating healthier doesn’t mean you have to skimp on flavour! And this delicous Chicken bites recipe is no exception! The Garlic Butter Chicken bites with a side of Lemon Asparagus, your whole family will be wanting more!

I found this delicious recipe on a friend’s timeline and had to re-share!

INGREDIENTS
3-4 boneless, skinless chicken breasts, cut into bite-sized chunks
2 bunch of asparagus, rinsed and trimmed
1/2 cup butter, softened
1 teaspoon olive oil
2 teaspoons minced garlic
1 teaspoon Italian seasoning
1 tablespoon hot sauce, optional
1/2 cup low-sodium chicken broth (or white wine)
Juice of 1/2 lemon
1 tablespoon minced parsley
Crushed red chili pepper flakes, optional
Slices of lemon, for garnish
For the chicken seasoning:

For the chicken seasoning:
2 teaspoons salt
1 teaspoon fresh cracked black pepper
2 teaspoons onion powder

DIRECTIONS:
To prepare the chicken bites recipe and asparagus in the garlic butter sauce: Start to slice chicken breasts into bite-sized chunks and season with salt, pepper, and onion powder. Let sit in a shallow plate while you prepare the asparagus.

Wash and trim the ends of the asparagus, then blanch them in boiling water for 2 minutes then soak in ice water to stop the cooking asparagus. This way they will cook asparagus faster and evenly in the skillet. You can skip this step if you have very thin asparagus. Drain and set aside.

Heat half butter and olive oil in a large cast-iron skillet over medium-low heat. Gently stir-fry the chicken bites on all sides until golden brown. Lower the heat, add 1 teaspoon minced garlic and Italian seasoning and stir and cook with chicken bites until fragrant. Remove the chicken bites from the skillet and set aside to a plate. You might have to work in batches to avoid crowding the pan and have steamed chicken bites instead of browned.

In the same skillet over medium-high, add minced garlic then deglaze with chicken broth (or wine). Bring to a simmer and allow to reduce to half the volume. Add remaining butter, lemon juice, hot sauce, parsley. Give a quick stir to combine.

Add the blanched asparagus and toss for 2 minutes to cook it up. Add the sauteed chicken bites back to the pan and stir for another minute to reheat. Garnish the chicken and asparagus with more parsley, crushed chili pepper, and lemon slices and serve your garlic butter chicken bites and asparagus immediately. Enjoy!

Dear Friends
Superfoods are a naturally superior group of foods. In order to be considered a superfood, they must be nutrient dense, yet low in calories. Also, they all have a high concentration and variety of: -vitamins -minerals -antioxidants -phyto-nutrients -fiber -healthy fats -quality proteinSuperfoods come in a range of forms. Some include:

Green Superfoods (such as kale, spinach, wheatgrass, and spirulina)These foods have the highest concentrations of bio-available vitamins, minerals, phyto-nutrients, and healthy bacteria. They help to protect against disease, build immunity, improve digestive health, and build lean muscle. Fruit Superfoods (such as goji berries, acai, raw cacao, coconut, and noni)These are especially high in antioxidants which protect the body from free radicals and oxidative stress. In turn, they help to prevent disease and cellular damage. Herb Superfoods (such as nettle, echinacea, ginseng, and aloe vera)Herbs provide the body with essential nutrients that it can’t otherwise produce itself. These superfoods are great supplements for vitamin and nutrient deficiencies. Each herb has a different function, but they work in conjunction to rebalance and regulate the body.

By now, you’ve probably heard of the ketogenic diet, or a low-carb, high-fat diet. It’s a popular diet trend among athletes and average folk alike. (Who doesn’t love the idea of eating more steak and bacon?) But what actually happens to your body when you go on the ketogenic diet?
To understand how the ketogenic diet works, you have to understand ketosis, the process by which your body is starved of glucose for fuel and must look to fat sources instead. Typically, you fuel your body by giving it glucose in the form of carbs, which can be found in flour, grains, vegetables, legumes, dairy products, and fruits.
