Raspberry Summer Sensation

Summertime is coming! And with, family barbecues, family gatherings even family reunions! Make this summer event a day they will remember with rhis delightful dessert, Raspberry Summer Sensation! You can find this delicious dessert and others at food.com

Yields: 12 Servings
2 cups raspberry sorbet, or 2 cups sherbet
1 cup cold milk (can use Almond milk)
1 (106 g) package instant vanilla pudding (or try chocolate for an extra special treat!) (look for sugar free)
3 cups Lite Cool Whip, thawed
1 cup fresh raspberries

Directions:

Line a 9×5 inch loaf pan with foil, spoon sorbet into pan and put in the freezer for 10 minutes.

Pour milk into a large bowl and add dry pudding mix. Whisk until well blended and fold in whipped topping. Spread pudding mixture over sorbet in pan.

Freeze for at least 3 hours or overnight. Wrap securely and label if freezing longer than 24 hours. Unmold loaf pan onto a serving platter and top with fresh raspberries just before serving. It will be easier to cut if it rests for 15 minutes.

CINNAMON APPLE CAKE
A delicious way to end your meal!  Sugar can be substituted for Stevia,  ane with using almond flour, you can make a very healthy, liw carb dessert!  P.S. with using almond or coconut milk over 2% milk, is even better!    
Ingredients……½ c sugar1/2 c softened butter2 eggs1 ½ c flour1 ½ t vanilla extract1 ¾ t baking powder1/2 c  milk1 apple, peeled and chopped1/4 c brown sugar (not packed)1 t cinnamon
Directions…Preheat oven to 350 degrees F.Grease and flour a 5"x 9" loaf pan.
Bowl #1: In a bowl, mix cinnamon and brown sugar… Set aside.
Bowl #2: Using an electric mixer, beat sugar and butter till smooth. Add eggs one at a time… Blend well… Beat in vanilla and set aside.
Bowl #3: Mix flour and baking powder
Stir flour mix into butter mix; add milk and beat until batter is smooth. Pour half of the batter into the pan, sprinkle with half of the brown sugar mixture and half of the apples… Using a fork press lightly into batter. Pour remaining batter on top, add the remaining apples and brown sugar mix… Press down lightly again. Using a skewer/chopstick/knife, swirl the brown sugar mixture through the batter.
Bake for 30-40 minutes or until an inserted toothpick comes out clean. Enjoy!

STRAWBERRY BANANA CHEESECAKE SALAD

Stir together:…
1 bag of miniature marshmallows (I left these out)
16 oz of vanilla yogurt
1 regular size tub of cool whip
1 (3 1/2 ounce) box/pkg of no bake cheese cake filling (just add in and mix with rest of ingredients…do not actually make the mix)
Stir ini
1-2 containers of sliced up strawberries
3-4 sliced up bananas
Other fruits can be substituted or added as desired.

Best served chilled and same day due to banana discoloration.

BAILEY’S IRISH CREAM MINI-CHEESECAKES

Whether for  a dinner party or just a treat, who couldn’t resist the great taste of Bailey’s Irish Cream Mini-Cheesecakes!  Enjoy!

For the crust:
16 whole Oreo cookies, finely ground in food processor
3 Tbs unsalted butter, melted

For the filling:
2 8 oz pkgs cream cheese
1/2 cup sugar
2 eggs
1 1/3 cups sour cream
3 Tbs Bailey’s Irish Cream
1 tsp vanilla
6 oz semi-sweet chocolate, melted and cooled slightly

For the ganache glaze:
8 oz semisweet chocolate, finely chopped (or 1 cup mini chocolate chips)
1 cup heavy cream
1 tsp instant coffee granules

baileys-irish-cream-chocolate-cheese-cakePreheat oven to 350°. Combine the ground Oreos and melted butter into a bowl until well blended. Spoon into 24 mini cheesecake cups.* Press into the bottom of each cup so the crust is flat. Partially bake for 10 minutes then remove from oven.

Using a stand or hand held mixer, beat the cream cheese and sugar until light and fluffy. Beat in eggs, one at a time. Stir in sour cream, Bailey’s, and vanilla. Spoon the batter over each crust, filling to a little less than half of the cup. Add the melted chocolate to the remaining batter. Spoon the chocolate mixture over the cheesecake batter, filling to about 3/4 full. Bake for 25-28 minutes until cheesecake is cooked through. Remove to a wire rack to cool.

Place a glass bowl over a pot of simmering water. Add the chocolate, cream and the coffee. Stir occasionally and heat just until chocolate has melted.

Once the cheesecakes have cooled, loosen the edges with a plastic knife and remove them from the pan by pushing up on the removable bottoms. Arrange them on a piece of waxed paper and spoon the glaze over the top.

*Mini muffin tins will not work with this recipe. Use a mini cheesecake tin with removable bottoms.

Super easy to make and only a handful of ingredients.
1 Angel food cake cut into bite sized pieces 

2 16 oz containers fresh strawberries 

1 cup sugar 

2 – 3.4 oz boxes cheesecake flavored Jello pudding 

1 8 ox container of cool whip 

4 cups milk (to make the pudding)
First cut the strawberries into quarters (saving a few for the top) and cover with the sugar. Set aside for at least 1 hour. 

Prepare cheesecake pudding as directed and once it is set mix in the cool whip. 

Start building your trifle by placing a layer of cake in bowl. Cover with a layer of pudding then a layer of strawberries. Repeat the layers until the bowl is full stopping with pudding on top. Garnish with fresh strawberries on top.
