Slow Cooker Carne Asada

Prep Time: 10 minutes | Cook Time: 6-8 hours | Serves: 8 
2 pounds organic grass-fed flank steak or skirt steak
2 chipotle peppers in adobo sauce
½ cup freshly squeezed orange juice
2 organic limes, juiced and zested
6 garlic cloves
¼ cup coconut aminos
½ cup organic cilantro
1 teaspoon organic cumin
1 teaspoon organic paprika
1 teaspoon organic oregano
1 teaspoon organic chili powder
Freshly ground pepper, to taste
Optional for serving: tomatoes, cilantro, shredded cheese, sour cream, cabbage, etc.
1.) In a blender, combine all ingredients except for the meat and puree until smooth. Place the meat in the slow cooker, pour the sauce over the top and cook on Low for 6-8 hours, or until fork tender. Serve with any toppings of choice. Feel Great and Remember to Enjoy Your Health!

Slow-Cooker Chicken Broccoli Lasagna

Slow Cooker recipes are a time saver!  All you need to do is set everything up the night before or first thing in the morning!  While you’re busy day go on, your family dinner is simmering in the Slow Cooker!  Even the delicious Slow-Cooker-Chicken Broccoli Lasagna!  Enjoy!
1 bag (12 oz) Green Giant™ Steamers™ Select® frozen broccoli florets
3 cups chopped cooked chicken
3 1/2 cups shredded Italian cheese blend (14 oz)
3/4 teaspoon freshly ground pepper
1 can (10 3/4 oz) condensed cream of chicken soup
1 can (10 3/4 oz) condensed cream of mushroom soup
1 container (8 oz) sour cream
1 package (8 oz) sliced fresh mushrooms (about 3 cups)
9 uncooked lasagna noodles
1 cup freshly shredded Parmesan cheese (4 oz)
1 Cook and drain broccoli as directed on package, using minimum cook time. In large bowl, mix chicken, 2 cups of the cheese blend, the pepper, both soups, sour cream, mushrooms and broccoli.
2 Spray 5-quart slow cooker with cooking spray. Spread one-fourth of the chicken mixture in slow cooker. Layer with 3 of the uncooked noodles (breaking noodles as needed to fit), one-fourth of the chicken mixture and 1/2 cup of the cheese blend. Repeat layers twice. Sprinkle with Parmesan cheese.
3 Cover; cook on Low heat setting 3 hours 30 minutes or until bubbly and noodles are tender. Let stand 10 minutes before serving. Sprinkle with additional freshly ground pepper, if desired.

Classic Slow Cooker Corn Chowder

3 cups milk
2 (14.75 ounce) cans cream-style corn
2 (10.75 ounce) cans condensed cream of mushroom soup
2 (4 ounce) cans chopped green chiles
2 cups frozen corn
2 cups frozen shredded hash brown potatoes
2 cups cubed cooked ham
1 large onion, chopped
2 tablespoons butter
2 tablespoons hot sauce
2 teaspoons dried parsley 1 teaspoon chili powder
salt and ground black pepper to taste

Stir milk, cream-style corn, cream of mushroom soup, chopped green chiles, frozen corn, hash brown potatoes, ham, onion, butter, hot sauce, parsley, and chili powder in a slow cooker. Season with salt and black pepper. Cover and cook on High for 4 hours or on Low and for 6 hours.
Cook’s Note
I love to make this with bacon. I take 1 pound of bacon and brown, then crumble into the chowder towards the end.
