Turkey and 7 Grain Soup

Once again, another holiday has come and gone.   And am sure you have lots of turkey leftover!   Finding ways to serve the leftovers can be challenging!   Here is an awesome Turkey and 7 Grain Soup that is easy to prepare and is a healthy comfort food no one can resist!   So make it a plan to make some extra  for those cold Winter days … just by warming it up again, you can enjoy a bowl full of comfort!!!

Turkeyand 7 Grain Soup

1 tbsp (15 mL) olive oil
1 cup (250 mL) onions, diced
1 cup (250 mL) carrots, diced
1 cup (250mL) celery, diced
2 tbsp (30 mL) Italian seasoning
1 tsp (5mL) sage, dried
1 cup (250mL) 7 grain medley rice, uncooked
1 lb (454g) turkey, cooked, diced
2 cartons (900 mL) CAMPBELL’S® Ready to Use 30% Less Sodium Chicken Broth
1. Heat olive oil in large pot to medium-high heat. Add the onions, carrots and celery to pot and cook until tender.
2. Add the Italian seasoning, sage, rice blend and turkey. Stir and cook for a minute.
3. Add broth and bring to a boil then turn down and simmer for 30-40 minutes to medium-low heat.
