Low Carb Chili Verde Burrito
A friend showed me this recipes a few years ago. So glad she did, as it has been a favourite of mine! So easy to make and low carb, for those Health conscious peeps!
Everyone loves a taco, but how many love a burrito? Basically its a Mexican rolled tortilla with your choice of filling. Dress them up or have them plain, entirely up to you! But with burritos, you can have them for breakfast, for dinner or even a snack.
I love this recipe made with pork loin. Sometimes, I substitute chicken breast. You can choose which ever ingredients you like! Even with egg, bacon, ham or sausage, to make it a breakfast burrito. The possibilities are endless! Can even make it a vegetarian style as well! Make your burrito your own! Enjoy!
Carbs per serving – 9
1 1/2 lb pork loin (or chops or shoulder or whatever kinda pork you want, i just used a loin)
1 large can green enchilada sauce
8 tbsp salsa verde
1 cup mexican cheese or colby or cheddar
4 low carb tortillas ( we found burrito size ones that had 6 carbs each at Walmart)
4 tbsp sour cream (optional)
1. Put pork in crock pot.
2. pour the green enchilada sauce over it.
3. Cook on low 6-7 hours.
4. Pull out pork, chop it up then put it back in with the sauce.
5. Heat up tortillas.
6. Scoop 1/4 of pork onto tortilla with a straining spoon.
7. Top with 2 tbsp of salsa verde.
8. Roll burrito.
9. Add 1/4 the cheese.
10. Pour some sauce on top.
11. Add dollop of sour cream
