Orange Shrimp and Broccoli with Garlic Sesame
Fried Rice
Found this delicious recipe on a friend’s timeline!   Looks yummy!   Enjoy!
Shrimp and broccoli in a sweet and tangy orange sauce, served with garlic sesame fried rice.  Alternates to rice.. can use:
  • Red Or White Quinoa. …
  • Cauliflower Rice. …
  • Broccoli Rice. …
  • Brown Rice. …
  • Barley. …
  • Couscous. …
  • Farro.
Orange Shrimp and Broccoli with Garlic Sesame Fried Rice
Ingredients
For the shrimp & broccoli:
1 1/2 pounds large shrimp
3 cups broccoli florets
2 teaspoons of vegetable oil
1 cup of orange juice
2 tablespoons of soy sauce
1 1/2 tablespoons of granulated sugar
1 teaspoon corn starch
salt and pepper to taste
2 tablespoons of sliced green onions
2 teaspoons of sesame seeds
For the fried rice:
2 cups Mahatma Jasmine Rice
1 tablespoon minced garlic
1 tablespoon sesame oil
2 tablespoons of sesame seeds
1 teaspoon vegetable oil
salt
Instructions
1. In a medium pot, place 3 cups of water and 1 and 1/4 teaspoons of salt. Bring the water to a boil, then add 2 cups
of Mahatma Jasmine Rice. Bring the water back to a boil then turn the heat to low, cover the pot and let it
simmer for 15 minutes. Remove the cover and fluff the rice with a fork.
2. While the rice is cooking, heat a large pan over medium high. Add the broccoli to the pan along with 2
tablespoons of water; cook for 3-5 minutes or until broccoli is tender.
3. Season the broccoli with salt and pepper to taste and then remove it from the pan and set aside.
4. Wipe out the pan with a paper towel and return it to medium high heat. Add the 2 teaspoons of vegetable oil;
after the oil is hot add the shrimp in a single layer and season to taste with salt and pepper.
5. Cook the shrimp for 2-3 minutes per side or until pink and opaque. Remove the shrimp from the pan and set
aside.
6. Wipe out the pan with a paper towel and add the orange juice, soy sauce and sugar. Bring to a boil and cook until
the mixture has reduced by half and is starting to turn syrupy.
7. Mix 1 teaspoon of cornstarch with 2 teaspoons of cold water and add the mixture to the pan. Boil for 1-2 minutes
or until sauce has thickened. Pour the sauce over the shrimp and broccoli and cover with foil to keep warm.
8. To make the fried rice heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add the garlic and cook
for 1 minute – be careful to not let the garlic burn. Add the rice, sesame oil and sesame seeds to the pan and cook, stirring often, for 5 minutes. Add salt and pepper to taste.
9. To serve: place the rice on a platter and top with the shrimp and broccoli mixture. Garnish with the sliced green
onions and 2 teaspoons of sesame seeds. Serve immediately.

Biscuit and Gravy Breakfast Cups

You are probably saying, Biscuits and Gravy for breakfast?  Yes that is right!  You can have a healthy breakfast with Biscuits and Gravy when you are on a Low Carb/High Fat diet!   By making the biscuits yourself, instead of using store bought, you can use Almond Flour along with our Biotrust Whey Protein powder… and Yummy!

1 pkg. 8 count canned biscuits  or make your own healthy biscuits! (Recipe Follows)
8 sausage links, cooked
1 pkg. peppered gravy mix
2 eggs
1/4 C. milk
1/2 C. shredded cheddar cheese
pinch of salt and pepper
Biscuits and Gravy Breakfast Cups
Using a rolling pin, flatten each biscuit to a 4″ round and gently press into a greased muffin tin. Make gravy mix according to directions. Beat together the egg, milk, salt and pepper. Place 1 T. of the gravy mix in the bottom of each bread cup. Use 1 sausage link, sliced, per cup. Sprinkle the sausage with a little of the cheese. Pour enough of the egg mixture to fill the cup (some may spill out, mine did). Place muffin tin in a 350 degree oven and bake for 20-25 minutes or until biscuits are done and mixture is set. Serve with remaining gravy.

 

Making your own Biscuits?

Low Carb (Keto friendly) Biscuits

INGREDIENTS
1 Cups Almond Flour
1/2 cup Biotrust Vanilla Whey protein Powder
¼ Teaspoons Salt (Sea or Himalayan Salt)
1 Tablespoon Baking Powder
2 Eggs
 ⅓ Cups Sour Cream
4 Tablespoons Butter (melted)
⅓ Cups Shredded Cheese (optional)
½ Teaspoons Garlic Powder LowCarb - Keto Friendly Biscuits
DIRECTIONS

Preheat your oven to 400°. Spray your pan. A baking spray that uses flour is best.

Combine all of your dry ingredients. Using a fork will help break up some of the clumps in the almond flour.

Combine all of your wet ingredients and start mixing.

Keep mixing until all of the ingredients are well blended and smooth looking

Then Pour your wet ingredients into your dry and start mixing. A silicone spoon is great for this.   (This doesn’t take much effort. The almond flour actually absorbs liquid faster than flour.)

(Optional) Can add some cheese, herbs etc for more flavour.

Mix it all together until it is well mixed… rather doughy looking!

Transfer it by spooning out and dropping in either a muffin tin or on a flat cookie sheet, ensuring there is enough space for incase the biscuits start to spread!

Bake for 10 to 12 minutes.    Let stand for 5 mins and then serve with accompaniment!    Enjoy!
