RECIPE FROM: COOKING LIGHT

YIELD 3 1/4 cups (serving size: 2 tablespoons)

Hummus is becoming more and more popular as a dip or even a spread!   There are different types of Hummus, even store bought hummus.   But buying store bought, you are not always certain of the Healthy ingredients are so healthy, so why not make your own!   Here are some easy Hummus recipes I have come across, and love to share with you!   Enjoy!  Remember, Healthy Eating, Exercise helps to keep the mind, body and soul healthy and well!

This Middle Eastern dip is traditionally made with chickpeas, tahini, lemon juice, and olive oil; it lends itself to several variations. Prepare and refrigerate it a day ahead; let it stand at room temperature for 30 minutes before serving. Garnish with a lemon wedge and fresh parsley sprig, and serve with Spicy Baked Pita Chips.

Because of this, it’s understandable that people seek immediate relief in the form of sleeping pills and other medication.

A couple of weeks ago, I post about the Elimination Diet and it’s benefits. Today, will be discussing more about how the Elimination Diet can help with your Gut, your Allergies and more! Thanks for joining us!

Allergies are common! According to ACAAI (American College of Allergy, Asthma, & Immunology), between 40 and 50 million Americans suffer from them on a regular basis. The term ‘allergies’ covers a broad spectrum of symptoms, and are caused by an even wider array of dietary, lifestyle or environmental factors. Symptoms, such as fatigue, joint pain, bloating, gas, skin irritation, and sinus infections are only a fraction of the issues that one may experience when exposed to allergens. When these allergies are left untreated, however, these complications can escalate rather quickly.

How Functional Medicine Can Help

Functional medicine methods for allergy relief involves getting to the root cause of the allergy itself – not simply treating the reaction. In contrast, modern medical doctors simply treat the external symptoms of allergies and neglect to look for the answers to what might be CAUSING them. This disconnect leaves patients without answers and sometimes in even worse condition than they were prior to seeking help.

A few of the most common food-related allergies include peanuts, tree nuts, shellfish, dairy products, and eggs. Gluten, corn, and yeast are popular offenders as well, and that’s without mentioning environmental allergens such as pollen, mold, dust, or animal dander allergens. Anything can be an allergen if your body doesn’t know how to recognize or protect itself from it!

One thing you can do right away to get to work combatting your allergies is to start experimenting with elimination diets!Elimination diets work by eliminating questionable foods for at least a two week time period in order to observe the effects they have on your body.

Dear Friends,

Do you think you maybe have a food allergy but aren’t sure? Maybe you are experiencing fatigue, skin flare-ups, mood swings, asthma, arthritis, or nutrient deficiencies, but you are reluctant to medicate.

An elimination diet is a short-term eating plan that is a great starting point for pinpointing what food, if any, may be causing your symptoms.

Most elimination diets cut out all common allergens, including:
-gluten
-dairy
-soy
-refined/added sugar
-peanuts
-corn
-alcohol
-eggs, in some cases
-packaged, processed or fast foods

So how do you go about starting an elimination diet?

Follow these steps:
-Stop eating all of the common allergens from the food list for at least three weeks.
-Be sure to read food labels carefully to make sure you’re really avoiding even trace amounts of these foods.
-Keep a food journal during this time to record how you’re feeling on a daily basis.
-At the three week mark, start to reintroduce one food group at a time. Eat the food daily for 1–2 weeks and record your symptoms, taking note of any changes in symptoms between the elimination and reintroduction phases.
-If symptoms return, you can confirm that this food is a trigger by eliminating it once again.
-The goal is to see if the symptoms clear up when the food is removed a second time.

This process can be somewhat lengthy, but it is a good way to pinpoint and remove foods that cause negative symptoms.

Try this incredible, simple meal that is a great, elimination diet approved recipe:

Ingredients
-1 cup brown rice, rinsed well
-2 cups low sodium chicken broth or vegetable broth
-1 15oz. can kidney beans, rinsed
-1 tsp cumin, plus more to sprinkle on top
-1 tsp salt
-2 avocados, sliced
-2 green onions, chopped

Instructions
-Bring 2 cups of chicken broth to a boil
-Add 1 cup rice. Return to boil, then lower heat and cover. Simmer for 30-40 minutes or until all the water has been absorbed
-Stir to fluff. Remove from heat and allow to stand for five minutes
-While the rice is still warm, mix in the kidney beans, salt, and cumin.
-Place some of the avocado slices and chopped green onions on top, and sprinkle with an additional dash of cumin.
-Enjoy!

Ingredients3/4 cup frozen strawberries1/2 cup cucumber (peeled and sliced)1 frozen banana (large, broken into pieces)11/2 cups vanilla almondmilk (or alternate milk)11/2 cups kale (loosely packed, stems removed, you can also use spinach)1 handful spinach
DirectionsAdd the almond milk to a high-power blender and toss the banana pieces and kale in. Blend on high. Add the strawberries and cucumber. Blend again until smooth. Add in more almond milk and/or ice for desired consistency.
