Peanut Butter and Pumpkin Dog Treats

Baked dog treats filled with pumpkin and peanut butter.

Ingredients

2 ½ cups whole wheat flour

2 eggs

½ cup canned pumpkin

2 tablespoons peanut butter

½ teaspoon salt

½ teaspoon ground cinnamon

Directions
Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
Whisk together the flour, eggs, pumpkin, peanut butter, salt, and cinnamon in a bowl. Add water as needed to help make the dough workable, but the dough should be dry and stiff. Roll the dough into a 1/2-inch-thick roll. Cut into 1/2-inch pieces.
Step 3
Bake in preheated oven until hard, about 40 minutes.

Vietnamese Spring Roll Salad
(-via Taste.au  adapted via Superfood ideas)

A delicious and easy to make meal. In fact so was, I made for my lunch. It was so delicious. A meal I make quite often for lunch. Enjoy!

INGREDIENTS
200g dried rice vermicelli noodles
1/2 green oak lettuce, leaves separated
1 Lebanese cucumber, sliced diagonally
1/2 cup fresh Vietnamese mint leaves
1/3 cup fresh Thai basil leaves

DRESSING
2 tablespoons caster sugar
1/2 cup boiling water
2 tablespoons fish sauce
1 1/2 tablespoons lime juice
1 long red chilli, thinly sliced
1 garlic clove, crushed

SPRING ROLLS
50g dried rice vermicelli noodles
750g medium green king prawns, peeled
250g pork mince
1 small carrot, grated
1 brown onion, halved, grated
1/2 x 227g can sliced water chestnuts, drained, thinly sliced
1 egg, lightly beaten
1/2 teaspoon fish sauce
40 frozen small spring roll wrappers, thawed (see note)
Vegetable oil, for deep-frying


METHOD
Step 1
Make Dressing. Combine sugar and boiling water in a heatproof jug. Stir until sugar dissolves. Set aside to cool completely. Add fish sauce, lime juice, chilli and garlic. Stir to combine.
Step 2
Make Spring Rolls. Prepare noodles following packet directions. Drain. Cut into 5cm lengths. Cool for 5 minutes.
Step 3
Place prawns in a food processor. Process until smooth. Transfer to a large bowl. Add pork mince, carrot, onion, water chestnut, egg, fish sauce and noodles. Season. Mix until well combined.
Step 4
Place 1 spring roll wrapper on a flat surface with 1 corner facing you. Cover remaining wrappers with a dry tea towel. Place 1 level tablespoon prawn mixture across wrapper. Fold corner over filling. Roll up firmly, folding in edges. Brush final corner of wrapper with a little water to seal. Place on a tray lined with baking paper. Repeat with remaining wrappers and prawn mixture.
Step 5
Pour enough vegetable oil into a wok or large saucepan to reach 8cm up the side. Heat over medium-high heat. Deep-fry spring rolls, in 5 batches, for 3 to 4 minutes or until golden. Using a slotted spoon, remove from wok. Drain on paper towel.
Step 6
Prepare noodles following packet directions. Drain well. Arrange noodles, lettuce, cucumber, mint and basil on a serving platter. Top with spring rolls. Drizzle with dressing. Serve.

RECIPE NOTES
Small spring roll wrappers are available from Asian grocery stores. You can make larger spring rolls using the wrapper available at most supermarkets. Simply cut them into three pieces.

This IS really good! I’ve made this several times

~MAN-PLEASING CHICKEN~ AKA WORLD’S BEST CHICKEN

Shopping list:

Chicken thighs- 1 package, about 6-8 (Can also use breasts, but not as tender & juicy)

Dijon mustard- 1/2 cup

Maple syrup- 1/4 cup (I would use sugar free and sweeten it with Stevia)

Rice/rice wine vinegar- 1 tablespoon

Fresh rosemary

Salt and pepper

Method

To make this chicken, which you should absolutely do immediately, preheat your oven to 450ºF (230 C I think this seems very high and would reduce it to 200 c). Then, mix together 1/2 cup of Dijon mustard, 1/4 cup of maple syrup, and 1 tablespoon of rice/rice wine vinegar.

Put a 1.5 pound package of chicken thighs into a foil-lined, oven-proof baking dish. I used boneless, skinless thighs. Six came in my package, which made enough to serve 3 people. Then, salt and pepper the thighs. Pour your maple mustard mixture over them, turning the thighs in the mixture so they are fully coated.

Put the chicken thighs into the oven, and let them bake for 40 minutes or until a meat thermometer reads 165ºF. Baste the tops of the chicken with more sauce half way through. I find that a meat thermometer is essential in cooking because it allows me to check for doneness without cutting into the meat and losing its precious juices. Let the chicken rest for 5 minutes before serving.

Plate the chicken, making sure to spoon some extra sauce over the top. Sprinkle over some fresh rosemary. If there is ever a time to use fresh herbs, THIS IS IT! The flavors are just so good together. Enjoy the savory goodness of this meal!!Recipe courtesy of: wittyinthecity.com

Stuffed Zucchini: a delicious way to create a delightful meal! Your family will enjoy this healthy, heavenly entree and may even ask for seconds!

Found this delicious recipe on a friend’s SM timeline. Tried it and had to reshare with all of you! Enjoy!

2 large zucchini
2 tablespoon Grapeseed Oil, divided
½ yellow onion, diced
½ cup mushrooms
3 cloves garlic
¾ pound chicken (or turkey) sausage
½ cup grape tomatoes, halved
¼ cup fresh basil, chopped
1 package Crispy Chicken Blend
½ cup shredded Parmesan
1 eggs, beaten

Method of Preparation
Preheat oven to 375°F. Slice zucchini in half lengthwise. Scoop out the insides leaving about ¼ inch thick shell. Reserve ½ of the insides; chop. Heat 1 tablespoon Grapeseed Oil in a nonstick skillet over medium heat. Add the onion and mushrooms; sauté until tender, about 5 minutes. Add the garlic and reserved zucchini insides; sauté another 2 minutes. Transfer to a mixing bowl. Heat remaining 1 tablespoon in now empty skillet over medium high heat. Add the sausage and cook until browned and cooked through. Add to bowl with onion mixture and allow to cool slightly. To the mixing bowl add the tomatoes, basil, Crispy Chicken Blend, Parmesan and egg. Fill the zucchini with the mixture. Bake for 35-40 minutes or until zucchini are knife tender. Serve warm.

Crunchy Honey Garlic Pork Chops: Or you can use chicken! Your choice~ will become a family favourite!

Going back thru my social media recipes files, found this delicious recipe I got from a friend! Something I definitely wish to try again! With just a taste of Savory along with the sweetness of the Honey, this Crunchy Honey Garlic Pork Chop recipes will surely grab the whole family’s attention! Enjoy!

Ingredients:
6-9 pork chops (not too thick or chicken breasts)
4 Tbs water
2 eggs
2 cups all purpose flour
1 tsp. garlic powder
1 tsp. salt
1 tsp. black pepper
LouAna coconut oil for frying

Glaze:
1 1/2 cups honey
dash of cayenne pepper (to your taste)
1 tsp. fresh ginger-grated
1/2 cup Tamari or soy sauce
1 Tbs chopped garlic
2 Tbs coconut oil or butter

In a shallow dish Whisk the eggs and 4 Tbs. water together.
Mix the flour, salt, pepper and the garlic powder in a plate or shallow pan.
Dip the chops or chicken in the flour, then into the egg and then back over to the flour mixture again.(This is what puts the extra crispy coating on them), then place in a pan with about a half inch of the oil. You need to get it good and hot first and then turn to about medium, so they will not cook too fast.
Cook for about 5-6 minutes on each side without turning more than twice so you will not lose your breading .
Remove from the pan and put into a baking dish.
In the coconut oil over medium heat sauté the garlic then add the honey, soy sauce, cayenne, and ginger. Cook until bubbly then reduce to low and simmer for about 5 minutes. Watch this carefully because it might boil over.
Pour 1/2 of the glaze over the pork chops. Turn them over and pour the other 1/2 over the other side. In a preheated 350 degree oven cook uncovered for about 20-25 minutes. This sets the glaze and finishes them to be sure they are cooked through. When ready, place on serving dish with parsley garnish and Enjoy!

Most of us have been warned at some point about the importance of good posture, but chances are that a lot of us haven’t really given this too much thought. Sure, no one wants to end up permanently stooped over, or to find ourselves suffering from chronic back pain, but what does good posture mean beyond appearance? What does it mean for our bodies?

Good posture goes beyond looks. It helps us to stand, walk, sit, and lie in positions with the least amount of strain on the muscles and ligaments activated during movement. It also keeps our bones and joints in alignment, and it helps to support the ligaments holding the spine together to reduce the likelihood of injury. Poor posture, on the other hand, can lead to strain and cause our bodies to be out of alignment. Stress, obesity, pregnancy, weak muscles, tight muscles, bad working posture, and high-heeled shoes are all major contributors to poor posture. Luckily, over time many poor posture habits can be reversed by simply practicing good posture.Follow these instructions to maintain the proper seated and standing positions:Proper Sitting Position 
-Keep your feet flat on the floor or up on a footrest if they don’t touch the ground
-Do not cross your legs. our ankles should rest on the floor (or footrest) in front of your knees
-Sit forward enough in your chair so that there is a small gap between the backs of your knees and your chair.
-Your knees should not be positioned over your feet.
-Relax your shoulders and hold your forearms parallel to the ground.
-Avoid sitting in the same position for long periods of time.Proper Standing Position
-Maintain the bulk of your weight on the balls of your feet.
-Keep your knees slightly bent. Do not lock them!
-Stand with your feet shoulder-width apart.
-Let your arms hang naturally at your sides.
-Tuck your stomach slightly in.
-Keep your head level so that your earlobes are in line with your shoulders.
