Mexican Tortilla Casserole

Another amazing TexMex style Pie/ Casserole!
Found this yummy TexMex style Totilla in one of my groups! Thanks Val for posting!

Ingredients:
1 lb. ground beef
1/2 cup diced onion
1 pack taco seasoning mix
2 cups shredded cheddar cheese
1 can refried beans (they spread easier if you warm them in microwave)
1 cup prepared rice (I used Minute Rice)
1 can Mexican blend corn (DRAINED) only use about 1/2 can
4-5 large flour tortillas
8 oz of thick chunky salsa (your choice mild or hot)
How to make it :
Spray a spring form, round cake pan or casserole with cooking spray
Brown ground beef ,and onion and drain
Add taco seasonings and cook according to package direction
Lay 1 tortilla in bottom of baking dish and spread 1/3 of bean on it, top with 1/3 of the meat and sprinkle on some cheese
2nd layer tortilla-1/2 the rice, 1/2 salsa, 1/2 the corn and cheese
3rd layer tortilla-1/3 beans,1/3 meat, cheese
4th layer tortilla-beans, meat, corn, rice, salsa and cheese
Bake covered with foil at 350 for about 40 minutes uncover and bake 10-15 minutes longer. let sit 5 minutes before cutting.
After baking top with sour cream,diced onion and shredded lettuce if desired.

Shrimp, Avocado, and Grapefruit Salad

Shrimp | Avocado | and Grapefruit Salad | Low Carb | High Fat | Healthy Recipes

Whether on a low carb high fat eating plan or not, this is a delicious salad that can also be a meal!  Enjoy the Shrimp,Avocado and Grapefruit Salad!   Or switch up the ingredients with chicken, and other fruits!  Your options are limitless!  To your Health!

Shrimp-Avocado-Grapefruit SaladIngredients
2 1/2 tablespoons olive oil, divided
12 ounces peeled and deveined medium shrimp
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper, divided
1 grapefruit
2 tablespoons chopped fresh tarragon
2 teaspoons brown sugar
1 teaspoon chopped shallots
6 cups chopped romaine lettuce
1 peeled avocado, cut into 12 wedges $

Preparation
1. Heat a large skillet over medium-high heat. Add 1 1/2 teaspoons oil to pan; swirl to coat. Sprinkle shrimp with 1/4 teaspoon salt and 1/8 teaspoon pepper. Add shrimp to pan; cook 3 minutes or until shrimp are done, stirring frequently. Remove from pan; keep warm.
2. Peel and section grapefruit over a bowl, reserving 3 tablespoons juice. Combine grapefruit juice, remaining 2 tablespoons oil, remaining 1/4 teaspoon salt, remaining 1/8 teaspoon pepper, tarragon, brown sugar, and shallots in a large bowl, stirring well with a whisk. Add lettuce; toss. Arrange 2 cups lettuce mixture on each of 4 plates. Top each serving with 3 avocado wedges; divide shrimp and grapefruit sections evenly among servings.

ATOMIC BUFFALO TURD JALAPENO POPPERS (aka – A.B.T.)

You had my son at Jalapeno!!   If you have a Jalapeno lover in your family, he or she will just love these!  Enjoy!
ATOMIC BUFFALO TURD JALAPENO POPPERS
Prep time: 20 mins. Cook time: 3 hrs. Total time: 3 hrs 20 mins
Serves: 20 ABTs
Ingredients
10 jalapeno peppers
10 bacon slices, cut in half
10 mini sausages or smokies (or 20 if they are very small)
1 cup cream cheese
1 cup grated monterey jack
1 tsp chipotle powder
2 shallots, minced
Instructions
Slice the jalapenos lengthwise. Using a spoon, remove the seeds and membrane. If using bell peppers, quarter them after they are seeded.
Mix the cream cheese, monterey jack, chipotle powder and minced shallots. Fill the hollowed out portion of the peppers with the cheese mixture.
Place the smokie on top of the cream cheese. Wrap the half slice of bacon around the jalapeno. If the bacon is not staying tightly wrapped, it may be necessary to use a toothpick to hold it in place.
Smoke the ABTs in the smoker, set at 225F, for 2-3 hours, or until the bacon is browned.
Notes: To cook on the grill: Cook on a medium heat grill until the jalapeno is tender and the bacon is browned. Keep the lid covered while cooking.
To cook in the oven: Bake the ABT’s in the oven, set at 425F, for 20-30 minutes or until the bacon is browned.

Crockpot Philly Cheese Steak Casserole

Perfect for low carb diets, this is a double bonus, as it cooks in the crock pot all day so you can come home to a great meal.

2 lbs chip steak or 2 lbs cube steaks, cut into strips
1 green pepper, cut into strips
1 red pepper, cut into strips
1 onion, thinly sliced
1/2 lb mushroom, sliced more to taste
1 tablespoon olive oil
3/4 teaspoon kosher salt
3/4-1 teaspoon fresh ground pepper
1/4 lb pepperoni, thinly sliced
8 ounces provolone cheese, thinly sliced
Directions:
1 saute mushrooms in olive oil until softened and light brown, about 5 minutes.
2 add to crockpot along with the rest of the ingredients, except the provolone.
3 cook on low for 6 hours.
4 stir well, add to 6 bowls.
5 cover with provolone and add some cooking juices to each bowl to melt the cheese.
