Ingredients
cheese-balls-4– 1/2 cup shredded cheddar cheese
– 1/4 cup shredded mozzarella
– 1/4 cup shredded Parmesan
– 2 eggs
– 1/2 cup almond flour
– 1/2 tsp baking powder
Directions
– Preheat the oven to 400F.
– Add the eggs to a large bowl and whisk until lightly beaten.
– Add the remaining ingredients and mix well.
– Divide the mixture into 8 sections, roll each section into a ball and place it on a baking sheet lined with baking parchment or a silicone mat.
– Bake for 10-12 minutes until golden brown.

Festive Holiday Tree-Shaped Cheese Ball.

Holiday Occasions come with much Entertaining!  Whether Christmas parties, Potluck Meals, Family gatherings, there comes the Holiday treats!   Everyone loves  the Holidays when filled with yummy treats!  Here is one that everyone will love:  Holiday Tree-Shaped Cheese Ball!  Enjoy the Festivities… Enjoy the Holiday Treats…. Enjoy the Holiday Tree-Shaped Cheese Ball!

 Ingredients

holiday-tree-shaped-cheese-ball3 packages (8 ounces each) cream cheese, softened

4 cups shredded Cheddar cheese (16 ounces)

2 tablespoons basil pesto

1 tablespoon grated onion

1/4 teaspoon yellow mustard

Red pepper sauce

1/4 cup finely chopped parsley or cilantro

1/4 cup pine nuts or sliced almonds

2 tablespoons chopped red bell pepper

Piece of lemon peel, if desired

Assorted crackers, if desired

Directions

Stir together cream cheese and Cheddar cheese; divide in half. Stir pesto into 1 half; stir onion, mustard and 2 or 3 drops pepper sauce into other half. Cover each half; refrigerate about 4 hours or until firm enough to shape.

Place cheese mixtures on cookie sheet. Shape each half into cone shape to look like a pine tree.

If desired, wrap each tree, label and freeze up to 1 month. Twelve hours before serving, remove trees from freezer. Thaw in wrapper in refrigerator.

Just before serving, roll trees in parsley, pressing it evenly onto trees. Press pine nuts onto trees in string form for garland. Press bell pepper pieces onto trees for ornaments. Top each tree with star shape cut from lemon peel. Serve with crackers.

Keto Buckeye Cookies

Baking for the Holidays can be so much fun!  But it can also be loaded with sugars and unhealthy ingredients that causes you to gain weight over the Holidays!   But don’t despair, for with a few ingredient changes and substitutes, you can have your cake, cookie and eat it too!  Here is a great LCHF recipe for Keto friendly, Keto Buckeye Cookies!  Enjoy this Holiday Season, the LCHF/ Keto or Paleo way!

2 1/2 Cups Honeyville Almond Flour
1/2 Cup Peanut Butter
1/4 Cup Coconut Oil
1/4 Cup NOW Erythritol
3 Tbsp. Maple Syrup (recipe here)
1 Tbsp. Vanilla Extract
1 1/2 tsp. Baking Powder
1/2 tsp. Salt
2-3 Chocoperfection Bars (or 3-4 Squares 90%+ Dark Chocolate)
Beat all wet ingredients together, then in a separate container mix all dry ingredients together.
Sift the dry ingredients into the wet ingredients and mix well. Refrigerate dough for 20-30 minutes.
Preheat your oven to 350F, then chop up 2 Chocoperfection (or 90%+ Dark Chocolate) bars into small squares.
Form a small ball of dough into your hand and press flat. Add 1-2 pieces of chocolate between dough and seal together into a ball.
Press dough into a rounded tablespoon and put on a silpat.
Bake for 15-18 minutes. Optional: Broil 2-3 additional minutes.
